
We’re back with another delicious dish by the Dove Creek Equine Rescue Kitchen: Pineapple BBQ Chicken! I have to admit that the last recipe we shared has become a go-to dinner in my house! These recipes are easy to prepare but still pack a flavorful punch, making them the perfect meal for a busy week. Today Ali showed us a recipe that you’ll want to bring the grill out early for. Since the panhandle wind isn’t always accommodating, she opted to make it in the oven this time around. With just a few basic ingredients and a jar of Dove Creek BBQ Sauce (available at From 6th Collective) you can whip up this delicious smoky chicken dish!

Dove Creek Pineapple BBQ Chicken
Ingredients:
2 lbs Boneless Skinless Chicken Breasts
1 cup Dove Creek BBQ Sauce
1.5 cup Fresh Pineapple
1 Medium Onion, sliced
1 Red Bell Pepper, seeded and diced
1 Poblano Pepper, seeded and diced
1 Jalapeño, seeded and diced (optional)
Salt and Pepper to taste
Instructions:
Preheat the oven to 400º. Coat a baking dish with cooking spray or olive oil, and set aside. Dice all of the chicken breasts and set in a large bowl. Season the chicken with salt and pepper and toss to coat. Add 2/3 cup of BBQ sauce and let marinate for a minimum of 15 minutes. (If you want to make ahead, let the chicken marinate overnight in an air-tight container.) After the chicken has marinated, mix in the rest of the ingredients. Add the remaining 1/3 cup of BBQ sauce and toss together to coat. Pour the mixture into a baking dish and bake for 30 minutes. Let rest for 10 minutes before serving, and enjoy!
