This month the From 6th Collective x Burrowing Owl Bookclub pick was Black Cake. While we all had different takes on the book overall, one thing we could agree on was the craving to taste or recreate the traditional Caribbean confection. After a little more research, it became clear that I wouldn’t be able to achieve either one of those things on my day off, so I decided to mix up a different Caribbean favorite that had an unmistakable island twist, just like black cake.
I’ve made countless versions of popular southern style bread pudding which meant this recipe seemed like a breeze. What I pulled out of the oven was a moist and deliciously spiced Pudin de Pan.
